The Spark: From Cancer Research to Blood Sugar Education
Kelly’s passion for human physiology began early. While studying health and disease at USC, she focused her thesis on type 2 diabetes—a condition that would shape her future work. Fat: Healthy fats like avocado, olive oil, and coconut support satiety and help absorb vitamins A, D, E, and K. They also slow digestion, preventing blood sugar spikes.
Fiber: Found in vegetables, legumes, and whole fruits, fiber supports the microbiome, aids digestion, and slows the release of glucose into the bloodstream.
Leafy Greens (and colorful non-starchy veggies): These provide vitamins, minerals, antioxidants, and more fiber—delivering slow, steady energy without a crash.
LeVeque emphasizes whole, unprocessed foods and warns against acellular carbohydrates—refined carbs like flours and sugars that digest quickly and spike glucose. In contrast, cellular carbohydrates like fruits and veggies retain their fiber structure, causing a gradual and controlled blood sugar response. “An apple is nature’s time-release capsule. Apple juice is a sugar bomb,” she explains.
Myth-Busting: No, You Don’t Need to Eat 6 Small Meals a Day
For decades, mainstream advice suggested that eating five or six small meals per day was the key to balancing blood sugar. LeVeque disagrees.
“That model was reactive,” she says. “You’d eat a small meal, spike your blood sugar, crash, and then be told to eat again. The Fab Four stabilizes your blood sugar so you don’t need to snack constantly.”
Her clients—ranging from Hollywood actors to new moms—often find that after a few weeks on the Fab Four, they naturally shift into eating just two or three meals a day, with fewer cravings, more energy, and better sleep.
